What’s in the fridge ?... Steak n’ cheese snacks for dinner w/ sous vide Flank cold-cuts, truffle gouda, creamy carboncino and St. Agur blue w/ crisp red grapes and a cuppa homemade beef bone broth.
This was a grass fed flank steak sous vide w/ smoked pork belly fat. 130F for 4.5 hours, ice bath chill, fridge overnight, then quick sear on the grill.
