To satisfy the cravings of all those who asked for it...below is the recipe for the Holiday Pineapple🍍! You can also find this on @thetipsyhousewife

4 oz. marscapone
4 oz. cream cheese
4 oz. crème fraîche
1/4 cup fresh pineapple, drained (reserve the liquid) and finely chopped
1/4 cup fresh cranberries, simmered, reduced & cooled, finely chopped (can sub dried cranberries but if sweetened, make sure you soak in warm water for a few minutes to remove some of the coating. Then drain thoroughly, chop and add.)
1/4 cup finely chopped pecans
1/2 seeded jalapeño, finely minced (adjust with more or less to taste)
2-3 scallions, finely sliced - both white and green parts
1/2 tsp of mustard powder
Freshly ground salt
Freshly ground white pepper
Whole pecans for topping
Top stalks of fresh pineapple for decoration, cut whole stalk off at base then slice stalk in half vertically so it lays flat on your plate
Crackers to serve
Directions: Prep and mix all ingredients through mustard. Add in a few spoonfuls of the fresh pineapple juice and salt and pepper to taste and mix. Make sure you taste and add more seasoning as needed. Leave in fridge, covered, overnight or up to 2 days.
When ready to serve: Remove mixture from fridge 15 minutes before you’re ready to plate. Form the mixture into the shape of a pineapple on your serving dish. Place the pecans on top of mixture in a shingle detail from bottom to top until the entire “pineapple” is covered. Add the real pineapple stalk top to yours. Ready to serve!
