This actually turned out to be really good!
How it's made:
1] pour 1/2 tbsp Extra Virgin Olive oil into small pan. Turn heat on to between Medium and Low.
2] Add 2 spears of chopped Asparagus. Let fry for about a minute or two or until desired state.
3] Add chopped red onion. Let fry for another minute for two or until desired state.
4] Add sliced spinach leaves (fresh) and let cook for about another minute or until softened.
5] During the process of frying the veggies, prepare a bowl, a fork, 2 eggs, Himalayan pink salt, black pepper, and cayenne pepper. Mix them together until consistent. Add your own favorite seasonings if desired!
6] Pour the eggs over the sizzling veggies.
7] As the eggs lightly cook, use the spatula to gently push them towards the center of the pan.
When the eggs I no longer runny, you are all set! 😄
